This was sooooo amazing. And totally one I'm going to make for my veggie friends.

I may have added an onion I had lying around - yum.

And I served the leftovers over a coconut rice for an extra treat.

Oh I haven’t yet, but next time I might add peas and/or chicken for the meat eaters in our family! Would also be great w tofu.
